Bruschetta Steak Sandwiches

500 g top sirloin
salt and pepper for seasoning
2 chopped tomatoes
¼ cup chopped fresh parsley
1 green onion
1 garlic cloved, minced
1 tbsp olive oil
1 tsp wine vinegar
¼ tsp oregano
½ cup light feta, crumbled
4 whole wheat Kaisers or pita pockets

Season beef with salt and pepper, grill to your liking. Cut into thin strips.

Mix all remaining ingredient in a large bowl.

Place meat on buns and top with bruschetta mixture.

Pan-Fried Steak with Mushrooms

1.5 lbs steak
2 tbsp olive oil
1 large garlic clove, minced
2 tbsp low-fat sour cream (optional)
½ tsp salt
½ tsp ground black pepper
10 oz. sliced mushrooms
2 tsp minced fresh rosemary

Season the beef with ½ tsp of the salt and ½ tsp of the pepper. Heat 1 tbsp of the oil in a large skillet over high heat. Add the steak and cook until deeply browned on the first side. Turn, and cook until well-browned . Remove to a platter.

Pour off the excess fat and add the remaining 1 tbsp oil to the pan. Reduce the heat to a medium-low and add the mushrooms and garlic. Cook, stirring occasionally, until the juices start to flow. Add the rosemary, and the remaining salt and pepper. Cook until the mushrooms’ juices have evaporated. Remove from the heat. Stir in the sour cream, if using, and beef juices that have accumulated on the platter. Serve the beef with the mushrooms.
